Research by the Carpigiani Gelato Museum
just outside of Bologna, Italy suggests that the early history of gelato in Italy is closely intertwined with sorbet.
•Gelato descended from sorbet in the 16th-18th centuries
around Florence.
•Gelato became a street food in the 19th-20th centuries
with the invention of artificial ice.
•Gelato became portable when cones were first created
in the first half of the 20th century.
•Pasteurization arrived in Italy between 1950 and 1985
to make the production of gelato much safer.
